Not too easy...
you must edit the following files... easiest way is to change a current weight
htdocs/langs/en_us/other.lang (assuming your language is en_us)
htdocs/core/lib/product.lib.php
in other.lang add the following line after line 95
WeightUnitounces=ounces
in product.lib.php
goto line 313 you should see this
pick which one you can live without let say its this one
$measuring_units[99] = $langs->trans("WeightUnitpounds");
change ("WeightUnitpounds") to ("WeightUnitounces")
upload both files to their original locations
refresh your browser page
done...

I haven't tested this all the way through so I don't know how it will translate to reports or orders so keep that in mind
